Method
- Beat egg yolks and sugar until pale and thick. Gently fold in mascarpone until smooth.
- Dip ladyfingers in cooled coffee (avoiding sogginess) and layer in a dish.
- Sprinkle cocoa powder evenly over the first layer. Repeat with custard and ladyfingers.
- Chill for 4+ hours before serving.
Notes
Use strong brewed coffee for soaking the ladyfingers.
For a variation, add a pinch of cinnamon or a touch of orange zest to the coffee.
Chill at least 4 hours for best results. Can be made a day ahead.
