Tiramisu Express Facile et Ultra Gourmand

Ingredients
  

  • 3 egg yolks
  • 100g sugar
  • 500g mascarpone cheese
  • 24 ladyfingers (sponge fingers)
  • 50g cocoa powder
  • 100ml strong coffee
  • 1 tsp vanilla extract (optional)

Method
 

  1. Beat egg yolks and sugar until pale and thick. Gently fold in mascarpone until smooth.
  2. Dip ladyfingers in cooled coffee (avoiding sogginess) and layer in a dish.
  3. Sprinkle cocoa powder evenly over the first layer. Repeat with custard and ladyfingers.
  4. Chill for 4+ hours before serving.

Notes

Use strong brewed coffee for soaking the ladyfingers.
For a variation, add a pinch of cinnamon or a touch of orange zest to the coffee.
Chill at least 4 hours for best results. Can be made a day ahead.
