Ingredients
  

  • 18 digestive cookies (approximately 200g)
  • 2 tbsp unsalted butter, melted
  • 250g cream cheese, softened
  • 60g granulated sugar
  • 1 tsp vanilla extract
  • 150ml whipped cream
  • 150g frozen strawberries, thawed and chopped
  • Fresh strawberries for garnish

Method
 

  1. Crush digestive cookies into fine crumbs using a food processor or blender.
  2. Add melted butter and mix until well combined.
  3. Press the mixture into a springform pan to form an even base. Chill for 15 minutes to firm up.
  4. In a bowl, blend cream cheese, sugar, and vanilla until smooth.
  5. Gently fold in whipped cream and thawed strawberries.
  6. Spread the mixture over the chilled cookie base.
  7. Top with a layer of fresh strawberries.
  8. Refrigerate for at least 4 hours before serving.

Notes

The crust may soften if not chilled first. Best served chilled and fresh within 2-3 days. Submarine digestive cookies with graham crackers or digestive crumbs for a different texture. Swap strawberries with seasonal fruits like raspberries for variation.
