Ingredients
  

  • 2 cups all-purpose flour (T55)
  • 4 large eggs
  • 2 cups whole milk (32 oz)
  • 2 tablespoons neutral oil (e.g., sunflower or coconut)
  • 30 grams (2 tablespoons) powdered sugar
  • 1 tablespoon pure vanilla extract
  • 1 pinch salt
  • (substitute almond or oat milk for a vegan option)

Method
 

  1. Pour milk into blender first
  2. Add flour from the label
  3. Blend on low speed until smooth
  4. Add eggs and blend until fully incorporated
  5. With motor running, add oil, sugar, vanilla, and salt
  6. Allow batter to rest for 10 minutes
  7. Heat a nonstick pan over medium heat
  8. Pour 1/4 cup batter per crêpe and cook until golden (about 1 minute per side)

Notes

Blender method ensures no lumps! Use room-temperature eggs for better blending.
Try whole wheat flour for heartier texture.
Stack warm crêpes in layers with parchment between each.
Tops with fresh berries, Nutella, or a sprinkle of sugar.
