No-Bake Chocolate Layer Cake with Fresh Berries

Ingredients
  

  • 200 g biscuits (type Petit Beurre)
  • 150 g dark chocolate (70% cocoa)
  • 150 ml heavy cream (20% fat)
  • 100 g mixed berries (raspberries, strawberries)
  • 2 tablespoons powdered sugar

Method
 

  1. Crush biscuits in a plastic bag until crumbly.
  2. Mix with powdered sugar.
  3. Press mixture firmly into the bottom of a 20 cm springform pan.
  4. Heat cream in a saucepan until boiling.
  5. Pour hot cream over chopped dark chocolate in a bowl.
  6. Let sit 1 minute, then whisk until smooth.
  7. Allow ganache to cool slightly, then spread over the biscuit base.
  8. Chill for at least 1 hour.
  9. Top with fresh berries just before serving.

Notes

For gluten-free: use gluten-free biscuits
For dairy-free: substitute cream with coconut-based coconut cream (homogenized and chilled overnight)
Add chopped nuts, orange zest, or coffee extract to ganache for extra flavor.
Garnish creativity: use blueberries, kiwi, or edible flowers for special occasions.
Store in refrigerator up to 24 hours.
