Ingredients
  

  • 350g all-purpose flour
  • 200g softened butter
  • 150g brown sugar
  • 75g white sugar
  • 2 large eggs
  • 2 tablespoons vanilla extract

Method
 

  1. Preheat oven to 180°C (350°F)
  2. Whisk flour
  3. In a separate bowl, cream butter, brown sugar, and white sugar until fluffy
  4. Beat in eggs one at a time
  5. Add vanilla extract
  6. Incorporate flour mixture slowly
  7. Let dough rest 10 minutes
  8. Roll dough into balls and flatten
  9. Bake 15 minutes until golden
  10. Cool on baking sheets 5 minutes before serving

Notes

For a nutty flavor, use spelt flour in place of all-purpose
Ensure butter is softened for better creaming
Chill cookie dough if it becomes too sticky
Store in an airtight container for up to 3 days
