  • 4 cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 3 tablespoons powdered sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1 cup buttermilk
  • 2 tablespoons milk and 1 teaspoon white vinegar (if substituting)

Method
 

  1. Preheat oven to 375°F (190°C)
  2. In a large bowl, mix 4 cups flour with 3 tablespoons powdered sugar
  3. Add 1 tablespoon baking powder, 1 teaspoon baking soda, and 1 teaspoon salt to flour
  4. Cut in 1 cup cold butter cubes until mixture resembles coarse crumbs
  5. Gradually stir in 1 cup buttermilk until dough forms
  6. Knead dough gently on floured surface
  7. Roll out to 1/2 inch thickness and cut into 3-inch rounds
  8. Place on baking sheet and chill 10 minutes
  9. Bake 12-15 minutes until golden
  10. Transfer to a wire rack to cool

Notes

For substitute buttermilk, mix milk with 1 teaspoon white vinegar and let sit
Keep butter at its coldest for maximum flakiness
Avoid over-kneading the dough to maintain tenderness
