Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar (unrefined)
  • 2 teaspoons baking powder
  • 1 pinch salt
  • 1/3 cup melted butter (unsalted)
  • 1/2 cup milk (any milk of choice)
  • 1 teaspoon vanilla extract
  • 120g brown sugar (packed)
  • 1/4 cup pure cinnamon
  • 1/3 cup softened butter (for rolling mix)

Method
 

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt
  3. Add melted butter, milk, and vanilla extract, stirring until a smooth dough forms
  4. Chill dough for 10 minutes
  5. In a separate bowl, cream softened butter, brown sugar, and cinnamon until sandy
  6. Portion dough into 12 equal balls
  7. Roll each ball in the cinnamon-sugar mixture until fully coated
  8. Place on prepared baking sheet and bake for 12-15 minutes, until lightly golden
  9. Cool on a wire rack before serving

Notes

Use coconut oil instead of butter for vegan version
Store in an airtight container for up to 3 days
Avoid overbaking to maintain soft texture
Substitute honey instead of brown sugar for a honey-cinnamon twist
