Easy No-Bake Red Fruit Cheesecake

A no-bake cheesecake with a buttery crumb base, silky cheese filling, and bright red berry topping. Perfect as a stress-free dessert requiring only a few ingredients and a chilled crust.

Ingredients
  

  • digestive biscuits (200g - or graham crackers/Spéculoos)
  • unsalted softened butter (100g - melted and cooled)
  • soft fresh cheese (500g - Philadelphia-style, at room temperature)
  • heavy cream (250ml - 30% M.G., very cold)
  • powdered sugar (120g)
  • mixed red berries (100g - fresh or thawed frozen)
  • cinnamon (1/2 tsp, optional)

Method
 

  1. Crush biscuits into fine crumbs (use food processor or blender)
  2. Mix crumbs with melted butter until damp and press firmly into a chilled springform mold
  3. In bowl, mix cheese with powdered sugar and pinch of cinnamon until smooth
  4. Whisk heavy cream until stiff peaks form (2-3 minutes)
  5. Fold cream into cheese mixture until fully combined
  6. Pour mixture into prepared crust
  7. Smooth top with spatula
  8. Chill refrigerated for at least 4 hours (8 is optimal)
  9. Top with fresh berries before serving
  10. Trim edges with hot, dry knife for clean slices

Notes

Chill cake in refrigerator even overnight
Optional: dust crumbs with cocoa powder (vanilla/caramel variations possible)
Use circular weight to compress crumb base for 10 minutes while chilling
Best served with berries still cold from fridge
Freeze for up to 3 days (take 30 minutes to thaw before serving)
