Ingredients
  

  • 240 ml water (1 cup)
  • 115 g unsalted butter (1/2 cup)
  • 2 tablespoons granulated sugar (for the dough)
  • 1/4 teaspoon salt
  • 150 g all-purpose flour (1 cup)
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract (or vanilla powder)
  • 100 g granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • 60 g melted butter (for coating)

Method
 

  1. Preheat oven to 200°C (390°F). Line a baking sheet with parchment paper.
  2. In a saucepan, bring water, butter, sugar, and salt to a rolling boil. Whisk in flour until smooth. Remove from heat.
  3. Transfer the dough to a bowl. Cool slightly (1-2 minutes), then add eggs one at a time, whisking until fully incorporated. Stir in vanilla.
  4. Transfer dough to a piping bag with a star tip. Pipe 1.5-inch logs onto the prepared baking sheet. Bake for 12-15 minutes, until golden and crisp. Cool completely.
  5. In a bowl, mix 100 g sugar and 1 tsp cinnamon. Dip each churro bite into melted butter, then roll in the cinnamon sugar mixture.

Notes

Ensure ingredients are room temperature for smooth dough. For vegan options, substitute butter with melted non-dairy alternative and skip the eggs (use a flour-baking powder alternative if needed). Baked bites can be stored in an airtight container for up to 3 days.
