Ingredients
  

  • 2 cups whole milk
  • 3/4 cup sugar
  • 1/4 cup cocoa powder
  • 1/2 cup strong brewed coffee (cooled)
  • 2 tablespoons tapioca starch (Maïzena)
  • 2 large egg yolks
  • 1/4 teaspoon salt
  • Copeaux de chocolat (for garnish)

Method
 

  1. In a saucepan, combine milk, sugar, coffee, and cocoa powder. Heat over medium until warm, stirring until sugar dissolves.
  2. In a bowl, whisk egg yolks, tapioca starch, and salt. Gradually add 1/2 cup of the warm milk mixture to the yolks, then reincorporate into the saucepan.
  3. Cook over medium heat, stirring constantly, until thickened and smooth (about 2–3 minutes). Strain into a clean bowl.
  4. Cover and refrigerate for at least 2 hours. Serve chilled in ramequins, garnished with chocolate shavings.

Notes

Adjust coffee strength or cocoa powder to taste. Straining ensures a silky texture. Chill thoroughly before serving.
