Ingredients
  

  • 3-4 cups fresh or frozen cherries (pitted and diced)
  • 3/4 cup almond flour
  • 3 large eggs
  • 1/2 cup milk or plain yogurt
  • 1/3 cup powdered sugar (optional)
  • 2-3 oz dark chocolate, coarsely chopped (optional)

Method
 

  1. 1. Prepare cherries by pitting, washing if fresh, and dicing into small pieces
  2. 2. Whisk eggs in a bowl until well combined
  3. 3. Add almond flour, powdered sugar (if using), and milk/yogurt. Mix until smooth
  4. 4. Gently fold in cherries. Let rest for 5 minutes
  5. 5. Pour the mixture into a 23x33cm silicone baking dish
  6. 6. Chill in the refrigerator for 30 minutes or freeze for 2 hours for a firmer texture

Notes

Use ripe cherries for natural sweetness
Avoid overmixing to preserve fruit texture
For gluten-free: substitute with quinoa flour but ensure it still matches almond flour fat and texture
Sprinkle chopped cashews on top for added crunch
Add a pinch of saffron or cinnamon powder for extra flavor
